Elevate your main course by mastering the centrepiece of the Christmas table - a succulent, spiced roast goose cooked to perfection, complemented by a sumptuous chestnut gravy that adds layers of flavour and comfort. To accompany your centrepiece, transform the often-misunderstood Brussels sprouts into a delightful side dish, where tender sprouts meet the crunch of crispy shallots and the nutty notes of toasted almonds. Crispy on the outside, pillowy on the inside - you will learn the secrets to achieving the most heavenly roast potatoes that will have everyone reaching for seconds. Delve into tradition with a velvety bread sauce, elevated by the sweetness of caramelized shallots, a match made in culinary heaven.

Conclude your feast on a sweet note, as you craft a show-stopping caramel salted yule log.

Course Overview

  • Please arrive 15 minutes before the class begins for refreshments and registration to ensure the class begins on time.

  • Cookery classes include a mixture of hands-on cooking and demonstrations to help you get the most out of your time with us.

  • Take a break in the middle of the day to enjoy the dishes you have made thus far, before going back into the school for the rest of your course. At the end of the class, you will again be seated around the Chef's Table to enjoy the further dishes you have created, accompanied with a refreshment to reward your hard work.

  • Any food that you have created that you do not wish to eat on the day can be packaged up for you to take home with you. We will provide you with containers to take food home and bags to carry them in, however in the interest of sustainability we encourage you to bring your own from home.

  • Take home your new found knowledge and skills from the class, along with The Kitchen Apron and Recipe Pack as a souvenir of your time at the cookery school!
